Lyndall Dykes – Tutor Profile
Lyndall has been sharing her knowledge of cooking staple items from scratch for more than three decades. She started one of Coffs Harbour’s first health food stores in 1977, The Nut House. From there she taught vegetarian cooking classes in the region, before taking up a career in media.
By 2006 she rekindled her love of cheesemaking and in 2009 started teaching workshops from a purpose-built kitchen on her and her husband Wayne’s Emerald Beach property. In 2016 she created the award-winning Cheesemaking Workshop & Deli shopfront at the original plantation homestead at the NSW landmark Big Banana.
Lyndall is a prominent voice among Coffs events and industry bodies. She established the original Coffs Coast Food & Wine Festival in the mid-Nineties and sits on local government committees devoted to boosting food tourism for the region’s local farmers, growers and restaurateurs.
Lyndall and her workshops have been profiled on ABC Rural, ABC Coffs Coast and in Qantas magazine and have featured extensively in regional and national news press including The Daily Telegraph and The Queensland Times.
“It's a lovely and cost-effective process, making your own cheese,” she says. "It’s really fulfilling and quite empowering to take milk in the morning and by the time you get to that afternoon or evening you’ve got, for example, some haloumi to feed the family."
