Alan has been professionally involved with food for many years. He has owned and operated coffee shops and restaurants on the Gold Coast. During this time, he also conducted cooking classes for Adult Education and numerous hospitality related subjects at Gold Coast TAFE.

Since moving to the Northern Rivers 4 years ago, his interest and passion for tea, its history and cultural influences has intensified. Although tea is next in line to water as the most commonly drunk beverage in the world, its use in cooking has been mostly overlooked in the West. Tea is a common element in many food traditions and a resurgence in interest in the combination of teas and food has recently blossomed in the West.
